Watermelon and Feta Salad

The best kind of summer nights are the spontaneous ones; better yet, the best nights in general are usually spontaneous. And since the rest of this week is supposed to be record hot in Chicago, I figured I’d throw together a spontaneous, healthy, quick and refreshing salad.

Ingredients:

  • Watermelon
  • Mint
  • Red Onion
  • Feta Cheese (I used light feta to keep it healthy)
  • EVOO – Extra Virgin Olive Oil
  • Salt and Pepper

Slice red onion and set aside with mint and feta.

Cut up your desired amount of watermelon into cubes and drop into salad bowl with about a tablespoon of EVOO and teaspoon of salt and pepper.

Add desired amount of feta cheese and onions, sprinkle mint leaves.

Add another dab of EVOO and salt and pepper to taste. Toss and serve.
