Strawberry Poppy Seed Salad

This week was Vanilla Fringe’s six-month anniversary! Not like that is really all that cool; I actually think it is weird when people celebrate the half-year mark over the age of ten. But anyway, in honor of VF’s birthday, my friend Adam is putting together a video that I had some of my roomies help with the production of.  While we were making this video, I made a Strawberry Poppy Seed Salad and everyone was raving about it! I am not normally a fan of fruit in a salad, but this (no matter what time of year) is an amazing addition to any meal!   (update: video here

Ingredients for Salad:

  • Romaine Lettuce
  • Sliced Strawberries
  • Brie Cheese (remove rind and cube)

Caramelized Almonds:

  • ½ cup of slivered almonds
  • ¼ cup of sugar 

Melt sugar in pan and add almonds to brown, stir constantly.

Cool in foil. Add to Salad. 

Poppy Seed Dressing:

  • ¼ cup onion grated
  • ½ cup of canola oil
  • ½ cup of sugar
  • 1/3 cup of apple cider vinegar
  • 1 teaspoon of dry mustard
  • 1 ½ teaspoon of poppy seeds

Whisk all ingredients together to make. 

Toss and Serve! Scrumptious!
